中文摘要 | 本研究發現對海藻(Enteromorpha intestinalis)脂氧合?催化脂肪酸產物對食物中毒原因菌Vibrio arahaemolyticcus與Staphylococcus aureus、腐敗菌Bacillus subtilis、水產病原菌Aeromonas hydrophila與Staphylococcus pyogenes具有抑菌作用,但對Enterobacter aerogenes, Pseudomonas aeruginosa, Saccharomyces cerevisiase, Salmonella sentenberg等微生物則無影響。此為添加海藻於食品中,具有延長貯藏期限之可能原因。分析海藻脂氧合?催化18:2之產物為9-及13-HODE (hydroperoxyoctadecadienoin acid),比例為66.3:33.7。脂氧合?催化18:3之產物為13-HOTE (hydroperoxyoctadecatrienoic acid)。海藻脂氧合?催化20:4之產物為12-及15-HETE(hydroxyeicosatertraenoic acid),比例為73.7:26.3。海藻脂氧合?催化產物之抗菌性,可能來自所形成之過氧化物。 |
英文摘要 | The sea algae (Enteromorpha intestinalis) lipoxygenase (LOX)-catalyzed oxidation products of linoleic acid were assayed for antimicrobial activity. The LOX-catalyzed products were found having antimicrobial activity to Lactobacillus plantarum, vibrio parahaemolyticcus, Bacillus subtilis, Aeromonas hydrophila, Staphylococcus pyogenes, and Staphylococcus aureus while no antimicrobial activity to Enterobacte aerogenes, Pseudomonas aeruginosa, Saccharomyces cerevisiae, and Salmonella sentenberg. Beased on retention time in normal or reverse phase HPLC analyses, products derived from linoleic acid treated with sea algal LOX were 9-and 13-HODE(hydroperoxyoctadecadienoic acid) with a ration of 66.3:33.7. The product of linolenic acne reacted with algal LOX was 13-HOTE (hydroperoxyocatadecatrienoic acid). The products of sea algal LOX treated with arachidonoic acid were 12- and 15-HEE (hydroxyeicosateraeenoic acid) with a ratio of 73.7: 26.3. |
