中文摘要 | 本研究探討利用加壓水噴洗胡蘿蔔過程,噴洗條件與用水量間的關係,以找尋省水的胡蘿蔔原料清洗方法。實驗係於一自行設計的清洗試驗裝置上進行,最高噴洗壓力可達7kg/cm2,試料則藉由輸送帶的移動加以轉動。實驗設計採曲面反應法,分析水壓、噴洗時間、噴嘴與試料間的距離及試料浸水時間等四個因子對清洗清潔度的影響。結果顯示,採浸泡時間4分鐘、噴嘴高度200mm、噴洗水壓2.9kg/cm2及清洗時間3秒為條件,清洗所得之胡蘿蔔其清潔度已達加工之要求,而用水量最省,榨出之胡蘿蔔汁的顏色也與由工廠取回之原料所榨出者相同。 |
英文摘要 | Operational parameters of jet washing for carrots was studied in a special designed apparatus to optimize the washing process with the consideration of reduction of water consumption. Water pressure of the jet washing was adjusted form 0 to 7 kg/cm2. Carrot was loaded on a conveyer, durig washing test it moved to rotating carrot under the nozzle. Relationships between cleaniness and washing processes, including presoaking time, water pressure, washing time and the distance betweed nozzle and carrot, were statistically analyzed by the response surface method. Results showed that, by a parameter combination of presoaking for 4 minutes, jet washing for 3 second with a water pressure of 2.9kg/cm2 and distance of 200 mm clud obtain a acceptable cleaning and minimum water use. |
