中文摘要 | 本文探討不同蠶齡期家蠶(Bombyx mori)所食用之臺桑二號(Morus alba L. var. acidosa G. cv. Taisang 2)桑葉之抗氧化性,及所含成分與其抗氧化性之相關性。 不同成熟階段桑葉之甲醇萃取物對亞麻油酸氧化之抗氧化性,以二齡桑葉的80.6%活性為最強,而以一齡桑葉之活性最弱。在樣品中以二齡桑葉甲醇萃取物之β-胡蘿蔔素及總生育醇含量最高,分別為2.92mg/g及833.0μg/g,其餘皆依序為三齡桑葉、五齡桑葉、四齡桑葉與一齡桑葉;抗壞血酸含量則以三齡桑葉最高(0.527mg/g)。總酚類化合物則以五齡桑葉含量最高,為1.54mg/g。不同成熟階段桑葉之甲醇萃取物其β-胡蘿蔔素、總生育醇、抗壞血酸及總酚類化合物含量與其抗氧化性之相關性分別為0.80,0.78,0.28與0.47,此顯示β-胡蘿蔔素與總生育醇含量之多寡與桑葉甲醇萃取物之抗氧化性高低有極密切之關聯性。 |
英文摘要 | The antioxidative activity (AOA) of mulberry leaves (Morus alba L. var. acidosa G. cv. Taisang 2) for different instar larvaes and the relationship between AOA and the components in the mulberry leaves were investigated. Among the five leaves, the methanolic extracts of mulberry leaves (MEML) from the 2nd instar larvae exhibited the strongest AOA and showed 80.6% inhibition on peroxidation of linoleic acid while the 1st instar larvae exhibited the weakest AOA. The MEML of the 2nd instar larvae contained high amounts of β-carotene (2.92 mg/g) and total (833.0 μg/g) while the 3rd and 5th had the highest ascorbic acid (0.527 mg/g) and total phenolic compounds (1.54 mg/g), respectively. The correlation between the β-carotene, tcopherol, ascorbic acid and total phenolic compounds of various maturity stages and AOA was 0.80、0.78、0.28 and 0.47, respectively, indicating that the AOA of MEML was well correlated with the amount of β-carotene and total tocopherol. |
