| 中文摘要 | 海鮮食品污染重金屬的問題,在高度工業化的社會中日益受到重規。本研究的目的,即在調查區域性販售魚貨的重金屬含量,是否在食品安全的標準限量之內。蒐集十五種臺中港魚市販售之海鮮樣品,以原子吸收光譜法(atomic absorption spectrophotometry),分別測定各個樣品之銅、鎘、鉛、砷、汞含量。銅、鎘、鉛三種元素是以火焰燃燒原子化法(flame atomization)分析;砷、汞二元素則採用氫化物生成法(hydride formation system; HFS)測定之。各元素含量的分佈範圍如下:銅:0-30ppm,鎘:0.02-0.25ppm,鉛:0.02-0.29ppm,砷;0.40-1.61ppm,汞:0.003-0.35ppm。經與國內外相關衛生安全法規限量標準比較後發現,所有樣品之重金屬濃度均在衛生標準限量之內,並無含量過高之情形。是故作為食用應無衛生安全上之顧慮。 |
| 英文摘要 | The issue concerning the heavy metal contamination of seafoods has increasingly become important in industrialized countries. The objective of this researchwas to investigate the heavy metal contents of fishes from Taichung port fishmarket. Fifteen fish species were collected and their copper (Cu), cadmium (Cd),lead (Pb), arsenic (As) and mercury (Hg) concentration were analyzed by atomicabsorption spectrophotometry. Cu, Cd, Pb were determined via flame atomizationand hydride formation system (HFS) was used in As, Hg assays. The determinedrange of heavy metals were Cu 0-30 ppm, Cd 0.02-0.25 ppm, Pb 0.02-0.29 ppm. As 0.40-1.61 ppm and 0.003-0.35 ppm for Hg. Results showed that heavy metal contents of all fish samples were under the limits of related hygienicregulations and the fishes should be safe for human consumption as food sources. |
