英文摘要 | The feasibility of applying reverse osmosis technology in the making of high-quality tomato concentrate was investigated. Results show that centrifuging single-strength tomato juice at 13,000xg to separate it into the serum and the pulp, concentrating the serum portion alone using DDS HR-95 polyamide membrane at 50℃-40 bar operation conditions to 18.8° Brix, and then recombining the concentrate with the pulp portion produces an approximately 3-fold concentrated tomato juice product. The juice reconstituted form this product has good color quality and a viscosity reading much higher than that of juice reconstituted from evaporated concentrated tomato paste. |
