中文摘要 | 乾燥海扇貝柱(俗稱干貝柱)和冷凍海扇貝柱為本省進口水產品中,頗受國人嗜好之產品,其主要進口國為日本,唯日本海扇貝每年均遭受貝毒之毒化,為了解這些產品中是否殘留貝毒及其衛生品質狀況,乃至全省六個地區,共採干貝柱36包和冷凍海扇貝柱18包檢體,經調查市販品之一般化學組成,衛生品質,以及麻痺性貝毒和下痢性貝毒之毒性。由實驗結果得知臺灣市販干貝柱之平均化學組成為水分20.60,蛋白質65.97,灰分8.99和脂質1.30。臺灣市販冷凍海扇貝柱之平均化學組成為水分76.71,蛋白質20.20,灰分1.68,脂質0.12。臺灣市販干貝柱和冷凍海扇貝柱之全部檢體中,H�烙�祐“e陰性反應,麻痺性貝毒及下痢性貝毒亦均呈陰性反應,但大腸菌群有6個樣品呈陽性反應,生菌數亦有8個樣品含量超過1X10�顏FU/g,顯示臺灣市販干貝柱和冷凍海扇貝柱仍存在有細菌污染問題。 |
英文摘要 | Dried and frozen scallop adductors in Taiwan are mainly imported fromJapan and are quite popular by the consumers on the market. In order to know the chemical characteristics, hygienic qualities and toxicities of the commodities,total of 36 and 18 packages of dried and frozen scallop adductors were sampled respectively from 6 counties in Taiwan. Chemical compositions, hygienic qualitiesand toxicities of these samples were analyzed. The average approximate composition were moisture, 20.60 and 76.71; protein, 65.97 and 20.20; ash, 8.99and 1.68; and lipid, 1.30 and 0.12 in dried and frozen scallop adductor, respectively. It was found that all samples in the dried and frozen scallop adductors showed no residue of H�烙��, paralytic shellfish poison and diarrhetic shellfishpoison, but some dried or frozen scallop adductors showed a contamination ofcoliform bacteria and/or of more than I X 10�� CFU/g of bacteria. |
