中文摘要 | 以材質為polyestersulfone、分子量截取(molecular-weight cut-off;MWCO)為 30KD、有效過濾面積為5ft�揪漳piral wound型超過濾裝置進行虱目魚肉糊製備時 漂洗水中肌漿蛋白質(sarcoplasmic protein;Sp-P)之回收。隨著操作壓力之提高其透 流率增加,但5kg/cm�摒偃抩A操作壓力。當體積濃縮比達8時,透流率由原來之 5.81/m��/hr降至2.81/m��/hr,此時原液中蛋白質的回收率為70,總固形物之回收 率為48,而總固形物中95以上為蛋白質。另一方面,以滯留率表示時,蛋白質由 82增至95時,總固形物由62增至87,表示此條件有利於蛋白質之回收。胺基酸分 析顯示肌漿蛋白質的主要構成胺基酸為組胺酸(histidine)與甘胺酸(glycine),組胺 酸大都仍保留在滯留液中,表示其為構成分子量在30KG以上蛋白質之主要胺基 酸,而此回收Sp-P的加工特性則需進一步探討。 |
英文摘要 | Sarcoplasmic proteins were recovered from wash water of milkfish meat paste preparationusing an ultrafiltration unit. The filter was a spiral wound module of polyestersulfone membrane with molecular-weight cut-off (MWCO) of 30KD and an effective membrane area of5 ft. Permeate flux increased with the increase in operation pressure. Five kg/cm�掣as themost appropriate condition for operation. When volume concentration ratio (VCR) reached 8,the permeate flux decreased from 5.8 to 2.8 1/m��/hr. Meanwhile, 70 protein and 48 totalsolids were recovered. By contrast, the retention of protein changed from 82 to 95, whiletotal solids changed from 62 to 87. Sarcoplasmic protein was principally composed of histidine and glycine. Histidine, mostly retained in retentate, was the principal amino acid composing the protein with molecular-weight over 30KD. |
