中文摘要 | 以Thermoresistometer測試耐高溫腐敗菌Bacillus stearothermophilus CCRC12058指標菌孢子在不同懸浮液中之耐熱性質。此法測試時孢子液所需之升溫時間為0.3秒以內,且加熱過程中溫度極為穩定,經測試結果此孢子懸浮在磷酸緩衝液(pH7.0)中在130℃、135℃和140℃之D值分別為6.05、1.87和0.85秒,其z值約為11.0℃。而孢子懸浮於道原奶中時,其在130℃、135℃和140℃之D值分別為4.62、1.14和0.45秒,共z值為9.9℃。 由結果顯示此菌孢子懸浮在還原奶中之耐熱性較懸浮於磷酸緩衝液pH7.0中低,由z值縣示在還兆奶中時此株菌孢子熱熱之敏感性較低。 |
英文摘要 | The heat resistance of thermophilic Bacillus stearothermophilus CCRC 12058 spores at ultra high temperature was determined by a computer controlled thermoresisometer. The coming up time of this system is within 0.3 seconds. The D values of the spores suspended in reconstituted milk, the D values at 130, 135 and 140℃ were 4.62, 1.14 and 0.45 seconds respectively, and z value was 9.9℃. It indicated that the spores were more heat resistant in phosphate buffer pH 7.0 than in milk. According to the z values, the spores suspended in milk are more heat sensitive than in phosphate buffer. |
