| 中文摘要 | 本實驗把雞胸肉逢機分成五組,除控制組外,其它四組分別注射8%磷酸鹽溶液、黃豆蛋白溶液、玉米溥乳化液及橄欖油乳化液。每組胸肉經�媦腄B�媊� 處理後,分別冷藏0℃(PE膜)7天及冷凍-20℃(NY/PE/EVA=15/30/30 Mil)60天,貯存試驗。冷藏時間,玉米油組及橄欖油之水分流失較多,水分含量較少,但粗脂肪含量高;經烹調後,產品水分及粗脂肪含量與烹調前具有相同趨勢。於冷藏及冷凍期間,發現玉米油、橄欖油、磷酸鹽及黃豆蛋白組之嫩度、多汁性及總接受性均較控制組好;冷藏雞胸肉之官能性質以磷酸鹽組最好,冷凍雞胸肉則以橄欖油組為最佳。各組經氣相層析儀分析,發現玉米油組含高量司麻油酸,橄欖油組含豐富油酸。各組之TBA值圾隨貯藏時間增加而增多;磷酸鹽組最低,玉米油組及橄欖油組最高,但並無任何不良風味產生。控制組與其它四組之總生菌數均無顯著差異。 |
| 英文摘要 | Chicken breast was randomly divided into five groups injected with four different solutions including the control group, 8% phosphate solution, 8% soy protein solution, 8% corn oil emulsion, and 8% olive oil emulsion. Chicken breast was coated with batters and breadings and packaged with polyethylene and stored at 0℃ for 7days or packaged with laminated film (NY/PE/EVA=15/30/30 Mil) and stored at -20℃ for 60 days, respectively. During storage at 0℃, the corn oil and olive oil groups had more drip loss; therefore, containing less water and more far than the other groups. After cooking, the water and fat contents of the meat products and fat contents of the meant products had the same trend as those before cooking. During storage at 0℃ and -20℃, breaded breasts in the corn oil, olive oil, phosphate and soy protein groups were mere tender, juicier and acceptable than the control. The phosphate groups of the chilled breaded chicken breast and the olive oil group of the frozen breaded breast had the highest sensory scores during storage. The corn oil and olive oil groups contained the most abundant of linoleic acid and oleic acid, respectively. the TBA values of these five groups increased with the increase of storage time. The phosphate group had the lowest TBA value; and the corn oil and olive oil groups had the highest TBA values; however, or no rancid flavor as detected during storage. There were no significant differences in total plate counts among these five groups. |
