中文摘要 | 將內含相同多元不飽和脂肪酸含量組成之就魚肝油及其肝油脂肪酸甲酯混合物分別於37℃進行自氧化反應,並測定反應過程中的過氧化價,UV233nm 吸光度,UV268nm吸光度,脂肪酸含量之變化等氧化指標值。由自氧化反應過程中之三個共輒雙鍵系統變化趨勢 (UV268nm吸光度之變化),發現就魚肝油中之多元不飽和脂肪酸無論以天然之三酸甘油酯或人為之甲酯型態存在時,當其與多個氧分子作用時,並未出現立體阻礙現象。然而由於魷魚肝油甲酯化反應過程中去除油脂中具有促進自氧化反應之金屬離子,使得魷魚肝油的自氧化反應速率略高於魷魚肝油脂肪酸甲酯混合物。 |
英文摘要 | The peroxide value, fatty acid composition, UV absorption at 233 nm and 268 nm of squid liver oil and its methyl esters, which had the same polyunsaturated fatty acid composition, were determined during autoxidation at 37℃. No steric hindrance was found on the changes in cojugated triene (UV268 nm). The autoxidation rate of squid liver oil was faster than that of its methyl esters, this might be due to the metal ions, as autoxidation promotion factor, were removed during methylation. |
