中文摘要 | 在此研究中量測五溫度下製茶原料在三階段之平衡相對濕度,以建立其等溫吸濕線,並利用四個ERH/EMC模式以評估量測數據對模式之適稱性。不同製茶階段之茶葉ERH物性均有顯著不同。持水能力隨製作過程而降低。各階段ERH物性之適用模式亦不相同。以此研究結果與文獻數據比較,顯示茶葉此物性受到製作過程之影響。各種茶葉製品必須建立其特定之物性。 |
英文摘要 | Equilibrium relative humidity (ERH) data of tea leaves for tea manufacture at three stages were measured at 5, 15, 25, 35, and 50℃ to establish the sorption isotherms. Four ERH models were selected to fit the data. The ERH properties of tea leaves were affected significantly at different stages. The water holding ability of this product was reduced in the manufacturing process. The results of this study with the previously published data, the ERH properties of each product need to be established. |
