中文摘要 | 由於宗教信仰及健康的理由,近來素食人數大為增加且蔚為風尚,而錯誤的素食觀念易造成營養不良的現象。本篇主要是研究素食者的飲食狀況及營養狀態,並將其血液生化分析與非素食者做此較。以58名素食女性為對象,進行血液生化分析,飲食問卷調查,另取58名非素食之健康女性(年齡分佈與素食者相近)做血液生化分析比較。其結果如下: (1)血液生化分析: 1.止血紅素、飯前血糖、膽固醇,素食者比非素食者低,有統計上的意義(P<O.005) 2.血球比容、尿酸、三甘油脂、總蛋白質沒統計上的差異。 3.全部素食者的葉酸皆於正常範圍,維生素B12有二位低於正常值,其餘都於正常範圍。 (2)飲食問卷調查:回收50份,喝牛奶有43人,吃蛋有2人,補充維生素丸錠有14人,常吃的食物有水果、豆製品、牛奶、馬鈴薯、麵腸等。 |
英文摘要 | In recent years, there has been a trend towards vegetarianism in Taiwandue to religious and health reasons. However, a lack of nutritional understanding has led to cases of malnutrition. The aim of this study is to investigate thenutritional status of female vegetarians and to compare the biochemical and hematological data of vegetarian subjects with those of non-vegetarian controls. We recruited 58 female vegetarians into our study for biochemical, hematological, dietary assessment. At the same time, we selected another 58 agematched, non-vegetarian controls for comparison of the same biochemical andhematological parameters. The results of our investigations are as follows: A. Biochemical and hematological analysis a. The hemoglobin, fasting blood glucose and cholesterol values of the vegetarians were lower than those of non-vegetarians. The differences were statistically significant, (p < 0.005) b. No significant difference was found between the hematocrit, uric acid, triglyceride and total protein values for the two groups. c. The, serum folate value was within the normal range for all the vegetarians. Serum vitamin B12 levels of all the vegetarians but 2 subjects were within the normal range. B. Questionnaire: Of the 50 dietary questionnaires returned, 43 subjects drank milk, 2 ate eggs, 14 took vitamin supplements. The food items usually eaten included fruit,soya bean products, milk, potatoes and noodles. |
