中文摘要 | 以57%去乙醯程度,分子量為388,000道爾敦之幾丁聚醣配製成不同濃度的幾丁聚醣溶液,以了解剪切速率、溫度、離子強度、pH值對溶液流變性質之影響。結果顯示2%以上幾丁聚醣的溶液性質屬於非牛頓流體,溶液粘度隨溫度升高而降低,溶液中添加鹽會使粘度下降,此因相反離子作用使得分子鏈的構形變得較捲縮(compact)之緣故,而內生性粘度是隨pH值及離子強度增加而減少。 |
英文摘要 | The effect of shear rate, temperature, ionic strength, and pH on the rheological properties of chitosan (57% deacetylation 388,000 daltons) solutions with different concentration were studied. The results showed: 1) The Newtonian or non-Newtonian behaviors were dependent on the shear rate applied, molecular weight, and solute concentration; 2) The apparent viscosity decreased with increasing solution temperature; 3) Addition of salt led to a reduction in apparent viscosity. The decrease was due to the compact effect of the molecule exerted by the counter ions; 4) Intrinsic viscosity decreased with an increased in pH or ionic strength in solution. |
