| 中文摘要 | 本試驗之目的在測試上市毛豬可食部份豬肉之營養成分含量。試驗採用24頭三品種(L、W及J)雜交肉豬,醃公豬及肉女豬各半,依體重之大小平均分配入95、100及105kg三個活體重帶處理中,豬隻屠宰後取半邊屠體,依日式分切分成肩腿、腰脊、協腹、後腿四個部位。取四個部位及內臟之可食部分分別攪碎、採樣,並測定樣品之熱能、蛋白質、脂質、鈣、磷、鐵、維生素B□、B₂、菸鹼酸及水分含量。由試驗結果得知:各活體重處理之屠前活體重及屠體重雖有不同(P<0.001),但屠宰率、屠體及肉豬全體可食部分百分率、內臟及肉豬全體以及屠體各分切不為之可食部位之礦物質及維生素B群含量,在各活體重處理及性別間均無顯著差異及交互作用存在。然而在不同活體重與性別間、腰脊及肉豬全體可食部分枝熱能及水分含量均有顯著的差異(P<0.05)。協腹及肉豬全體可食部分之脂肪含量,閹公豬高於肉女豬(P<0.01;P<0.05)。由試驗結果顯示:24頭肉豬屠前活體重平均為97.38kg,屠體重77.41kg,肉豬可食部分之重量為60.89kg,每100g肉豬全體可食部分豬肉之營養成分含量如下:熱能353kcal;蛋白質16.99g;脂肪28.02g;鈣4.09mg;磷141.64mg;鐵2.29mg;維生素B1 0.41mg;維生素B2 0.86mg;菸鹼酸4.68mg;水分54.60g。 |
| 英文摘要 | The experiment was conducted to determine the nutritive values of the edible portions of market hogs. A total of 24 three-way crossbred pigs (L, W, J), half barrows and half gilts, were selected randomly according to three different live weight ranges (around 95, 100, 105kg) and sex. After the pigs were slaughtered, the left side of each carcass was then cut into shoulder, loin, belly, and ham using the Japanese cutting method. The edible portions of the four cuts and internal organs were ground, sampled and analyzed separately to determine their energy, protein, fat, Ca, P, Fe, vitamin B₁, niacin, and water contents. Although the live weights and the carcass weights among three different live weight groups differed significantly (p<.001), the dressing percentage, the percentages of edible portions of carcass and pig's whole body, the minerals, vitamins B₁ and B₂, and niacin contents in the edible portions of the carcass cuts, internal organs and pigs' whole bodies were not significantly affected by live weight or sex. However, the gross energy and water contents of the edible portions of loins and whole bodies differed significantly, separately (p<0.05). The fat contents of the edible portions of bellies and whole bodies for barrows were higher (p<0.01; <0.05) than those for gilts. The results show that the average live weight before slaughtering was 97.38 kg; the carcass weight, 77.41 kg; and the amount of the edible portion, 60.89 kg. The nutrient contents in a 100g of edible portion of pig's whole body were: energy, 353 kcal; protein, 16.99g; fat, 28.02g; Ca, 4.09mg; P, 141.64mg; Fe, 2.29mg; vit B₁, 0.41mg; vit B₂, 0.86mg; and niacin, 4.68mg; and water, 54.60g. |
