中文摘要 | 臺灣位居亞熱帶氣候區,是世界香蕉的重要產地。在內外銷市場逐漸建立品質分級觀念及面對其他國家的競爭下,香蕉成熟度的判斷方法必須有所改善,方能符合市場之要求。本研究即在探討以非破壞性之光學偵測技術,建立一套香蕉成熟度之判斷方法。 本研究係以色差計測量香蕉表皮的顏色;以化學分析法檢定果肉的還原糖含量;以分光光度計測定其反射或透射性質。光學偵測以反射方式為主,分析黃、綠香蕉之成熟度差異,將反射率或不同波長的反射率組合設為品質指標,並以統計分析所得的馬氏距離作為判斷其品質指標優劣的標準。結果顯示單波長型之品質指標以R680為最佳(馬氏距離□=031.08),而雙波長期以(R480-R680)/R680為最佳組合(□=121.4). |
英文摘要 | Taiwan, located in the subtropical area, is one of the most important places that produce bananas in the world. Due to the importance of quality grading and the competition from other countries, the method of judging banana’s ripeness must be improved in order to meet the requirements of markets. The objective of this research is to develop an electro-optical method for non-destructive measurements of banana’s ripeness. In this study, the color of banana’s peel was measured by the color difference meter, the reducing sugar content of pulp by chemical analyses, and the optical properties of reflectance and transmittance by spectrophotometer. In discriminating the sugar content of yellow from green bananas, the reflectance measurements by the 5° spectral reflectance device were emphasized. The quality indices (Q.I.) were chosen form either the single wavelength reflectance or the combinations of two wavelengths’ such that Mahalanoibs distance (□) was large enough. Results indicate that the best Q.I. for the single wavelength type is R680 (□=31.08), and that for the dual-wavelength type is (R480-R680)/R680 (□=121.4) |
