中文摘要 | 為配合本省大豆新品系區域試驗,改善大豆油品質,提高其食用價值,本試驗從臺灣6個農業改良場之大豆區域試驗中,收集12個參試品種(系)之種子,利用氣體層次分析儀分析其脂肪酸成分,所得結果如下: (一)大豆油脂肪酸主要由棕櫚酸、硬脂酸、油酸、亞油酸及亞麻酸等5種組成。其中以油酸及亞油酸脂含量較高,二者合計約佔全部之72~76%。 (二)不同品種及栽培地區,大豆油分含量及脂肪酸成分含量均有顯著的差異,顯示大豆油脂肪酸的組成,不僅為品種的特性,且受栽培環境之影響。本省南部地區生產的大豆油,其油酸含量高於北部地區生產者;亞油酸含量則恰好相反,北部地區生產者高於南部。 (三)油酸含量與油分含量間有正相關關係(r=0.257),而與亞油酸及亞麻酸含量間則有極顯著的負相關關係。(r分別為-0.888及-0.523)。亞油酸與亞麻酸兩者之含量則呈正相關(r=0.348)。棕櫚酸與亞油酸及亞麻酸含量間之相關係數各為r=-0.247及-0.220,均達5%差異顯著水準。 |
英文摘要 | Twelve soybean varieties being tested in the regional trials at six localities on Taiwan were used as the material for this study. All the soybean varieties were planted in spring and harvested in summer. Soxhlet apparatus and gas chromatograph were used for the extraction of oil and for the analysis of fatty acid composition. The major fatty acids detected on the chromatogram were stearic acid, palmitic acid, oleic acid, linoleic acid and linolenic acid. Both oil and fatty acid contents varid from varieties to varieties and from regions to regions. In general, oil content and oleic acid content were higher in the seeds obtained from the central and Southern Taiwan, while linoleic acid content was higher in the Northern Taiwan. Analysis of linear regression indicated that there was a positive correlation between oil and oleic acid content, linoleic and linolenic acid content. Negative correlations between the contents of oleic and linoleic acids, palmitic and linoleic acids, and palmitic and linolenic acids were also observed. For the production of soybean with higher linoleic acid content and relatively low linolenic acid content in each cultivated region, a number of varieties were recommended. |
