中文摘要 | 由於芹菜、芥末及羽扇豆在歐洲曾發生誘發過敏之案例,因此歐盟法規要求食品包裝上標示此三種過敏原的警語。臺灣食品藥物管理署為了強化食品安全,亦公告食品業者須遵循「食品過敏原標示規定」,以提供消費者充足資訊。鑑於目前臺灣食品檢驗單位尚未建立此三種食品過敏原的檢測方法,本研究室為了服務消費者以及避免市售產品或原物料供應廠家因未標示過敏原而發生爭議,特別建立芹菜、芥末及羽扇豆過敏原的即時聚合酶鏈鎖反應(Real-time PCR)檢驗技術,並以通過FAPAS能力比對之方式確認所建立檢驗方法的正確性。 |
英文摘要 | This research established a platform of quantification and qualification by commercial testing kits in identifying celery, mustard and lupine. After extraction of DNA from food sample, we estimated the cycle threshold values through real-time PCR. Among 5 types of commercial food products, only mustard-flavored fish ball detected no mustard DNA in our data. In summary, Uni-President Corp. has created an analysis system to identify the celery, mustard and lupine through real-time PCR, which has been qualified by FAPAS. |
