中文摘要 | 臺灣飲料市場每年預估之市場規模達新臺幣400億元,如雨後春筍般大量設立的外帶式飲料店,掀起一場激烈的戰爭,搶奪這偌大的市場。然而一窩蜂投入此飲料市場的結果,卻常是由於經營不善或其他種種風險因素而讓許多飲料店之創業者鎩羽而歸。針 對此產業之經營風險鮮少有相關研究對其進行探討與因應,因此本論文運用層級分析法(AHP)進行研究、分析外帶式飲料店之風險因子,利用半結構訪談法建立外帶式飲料業之相關風險因子與階層式關係。接著徵得十位專家進行AHP 問卷填寫,經過完整的AHP分析求得22 個風險因子之重要性排序。研究結果發現「產品品質」、「店面地點」、「員工素質」、「員工離職率」和「顧客忠誠度」為外帶式飲料店的經營者將面臨的五大風險來源。若能正確掌握風險因子,及早做好預防措施以及加強風險監測,必將大幅提升經營之績效,讓企業永續生存。最後,本研究以業者及相關專家之意見為基準,針對此五項風險因子探討其因應對策。 |
英文摘要 | In Taiwan, the annual estimates of the soft drink market reached NT $ 40 billion market scale. A great amount of take-out beverage stores were setting and growing up to snatch this huge market share. However, rushing into the market often result in business failure due to poor management and other risk factors for many entrepreneurs of these beverage stores. There were few relevant studies to explore and cope with the risk management of this kind of business. As a result, this paper applied AHP (Analytic Hierarchy Process) methodology to do risk evaluation by establishing hierarchical relationships of many risk factors about the take-out beverage stores operation. Semi-structured interviews were used to explore the related risk factors that could affect the success of take-out beverage stores. Ten experts were consented to fill out the professional AHP questionnaire and after a complete AHP analysis, this research obtained the priority of 22 risk factors weighted in the order of importance. Finally, the top five items of risk factors that have the largest influence on the operation of the take-out beverage stores were recognized. They are “Product quality”, “Location of the store”, “Employee level”, “Employee turnover rate” and “Customer loyalty”.According to the interviews with some experts in the field of take-out beverage, amount of suggestions were provided in this research to deal with these five risk factors. |
