中文摘要 | 在這個以消費為導向的咖啡產銷供應體系中,長久以來存在著環境生態受破壞及生產者不公平待遇的問題;而永續咖啡的運作即是要面對及解決這些問題。永續咖啡以有機咖啡、公平貿易咖啡及蔭栽咖啡三種具代表性的另類農業作業為主,其產銷運作是透過專屬單位的認證並授予標籤,進而與交易商及消費者溝通。同時要透過消費者願意付出比一般咖啡更高的價錢而得以銷售推廣,咖啡農可以因此得到較佳的利潤。永續咖啡的推廣近年雖有顯著的成長,且成為一個新興的利基市場;不過目前的市場價值卻還不到整個咖啡市4%。本論文整理不同學者與組織對永續咖啡相關的研究,提出綜合討論;第一部分對永續咖啡的定義、發展及市場現狀作介紹,第二部分是探討目前消費者面對永續咖啡的消費行為,第三部分則是檢視現階段永續咖啡的問題、挑戰與展望。最後希透過對永續咖啡發展、推廣模式以及消費者行為的了解,提出後續研究建議,作為台灣本土咖啡產業發展之參考。 |
英文摘要 | Organic, Fair Trade, and Shade grown coffee, collectively known as sustainable coffees, fill a market niche that is often rewarded with a premium price and can provide superior environmental, economic and social benefits to producers. The coffee farms were certified to meet the specific criteria established by different certified groups, and issued a label as an identification of sustainably produced coffees. Recently, sales of sustainable coffees have being growing significantly, with most prominence in the North American market. However, it is currently only account for 4% of the global coffee sales. As a result of the review of articles with topics related to sustainable coffees, this article is to firstly, address the definition, characteristics and markets of sustainable coffees, secondly, to study the consumer’s behavior towards sustainable coffees, and thirdly, to examine the problems and challenges that currently faced with in the sustainable coffee business. In addition, it is possible to learn and gain ideas and experiences from the study of the development of sustainable coffee, and hopefully, to serve as the template and references for the development of Taiwan local coffee. |
