中文摘要 | 近幾年來,隨著文明起飛,人們對生活品質的要求也日漸增長,餐飲產業已成為世界最大的產業之一。為順應世界潮流及配合國內餐飲事業之發展,各類型有著國際水準的主題餐廳、咖啡廳,如雨後春筍般的建立,而同業競爭壓力之大,更是不在話下。在這樣的環境中,提升服務品質以及管理績效自是餐飲業首重的目標,而資訊化即成為達成這個目標不可小覷的關鍵。 餐飲資訊系統,是餐廳經營者的數位神經系統,包括餐廳經營的整個流程,經營者可以藉餐飲資訊系統了解營運狀況並作出回應,能察覺競爭者的挑戰、顧客的需要,然後適時地提出經營策略。餐飲資訊系統需要軟硬體的組合,它能提供精準、直接和豐富的資訊給餐飲經營者,而這些資訊亦增進經營者的洞悉力和生產力,因此本研究提出一餐飲管理資訊統用以協助餐飲從業人員進行管理實務。 |
英文摘要 | In recent years, as the civilization takes off, people’s requisition for quality of the life increases day by day too. The food and beverage industry has already become one of the greatest industries of the world. For the development that complied with the world trends and cooperated with the domestic food and beverage undertaking, all kinds of theme restaurants, coffee shops with world level, the setting-up like the mushrooms after rain and the horizontal competition pressure is big, nothing more difficult. In such an environment, the first heavy goal for catering trade is to improve quality of service and managerial efficiency. In order to reach such a goal promptly, the key point is informationization. The information system of food and beverage is the digit nervous system which includes the whole procedure of restaurant management for the restaurant administrator who can make use of the information system of food and beverage to understand the operation conditions and react. The administrator can also perceive the competitor’s challenge and the customer’s need to adjust adaptively management tactics in the best time. The information system of food and beverage needs the association of software and hardware, it can offer perfect, direct and abundant information to an administrator, and the information also promotes knowing strength and productivity clearly for the administrator. |
