| 中文摘要 | 餐旅教育在臺灣可謂是蓬勃發展,截至九十四學年度,共有五十三所大學設置了八十二個相關系所。在餐飲相關的科系中,因各系的屬性不同,便衍生出不同的課程,其中以餐飲管理科系為名者共有九所學校。在餐旅相關科系的快速增加下,課程的規劃,在匆忙中必有不周詳之處,許多餐旅科系的課程設計,不僅缺乏中心思想,也找不到方向。本行動研究,主要探討在課程發展的過程中,校友、業界代表以及學界代表三方之利益關係人的意見,對餐飲系的課程如何作出實際課程修改的建議;並根據這些建議,藉由不斷的小組討論,凝聚系上課程委員們的共識,並藉著行動-反省-再行動的循環來發展出適切的高等教育餐飲課程設計模式。 |
| 英文摘要 | This paper is an action research illustrating three focus group meetings on the curriculum development with the alumni and representative from the industry and academia. It was aiming at examining the curriculum that had been implemented for three years in an institute of technology, the existing curriculum design was the roadmap of this study. Under the scope of the old curriculum, the Curriculum Committee members proposed to modify the curriculum according to the proposals of the stakeholders. Modification of the original curriculum became the most important task and researcher found that, during the study, the original curriculum did not contain either a theoretical basis or a consideration of the practical needs. Based on the stakeholders' viewpoint from three focus group meetings, the Curriculum Committee discussed and reached consensus. According to the stakeholders' recommendation, the curriculum committee revised the curriculum diagram which made the diagram more logical and easier to be understood. The course sequence was clearly illustrated by the diagram which was divided into twelve categories. After the diagram has been drawn, the course sequence became logical, and the curriculum design complied with the primary goal and objectives of the establishment of the Department of Food and Beverage. |
