中文摘要 | 本研究之目的在探討營養學課程對非營養系學生營養知識之影響。以台北市某大學學院3系8班修習營養學課程之371名學生為研究對象,採用選擇題試題為研究工具,內容分為醣類、蛋白質、脂質、維生素及均衡飲食五類別。在課程開始時進行前測,經過每週2小時(共10週)教育後再施行後測,將有效填答之測驗卷進行試題分析和統計分析。研究結果顯示平均難度指數由前測0.44(困難)上升至後測0.60(難易適中),鑑別度指數由前測0.21上升至後測0.29(均為尚可)。前測結果顯示非營養系學生的營養知識普遍不足,但經成對樣本七檢定分析顯示,在經過營養課程教育介入後,營養知識的測驗分數能顯著(p<0.001)提昇。後測成績方面,學制和年級對答題狀況的影響並不顯著,但非營養系女學生於脂質方面的成績顯著(p<0.01)較佳;前測的成績雖以家庭研究與兒童發展學系最差(p<0.05),但後測卻是以該系的成績顯著(p<0.05)高於餐飲管理學系,顯示成績與課程教育其他因素有關。 |
英文摘要 | The purpose of this study was to evaluate the effect of nutrition course education on non-nutrition majored college students' nutrition knowledge. In total, 371 non-nutrition majored college students from 8 classes of 3 departments in Taipei completed a multiple choice questionnaire, including 5 categories: carbohydrate, protein, fat, vitamins, and balanced diet. Pre-test and post-test were taken before and after 20 hours (2 hours/week) of nutrition education. Item analysis and statistical analysis were applied to valid questionnaires. The results showed that the average difficulty index was increased from 0.44 (difficult) of pre-test to 0.60 (adequate) of post-test. The average discrimination index was also increased from 0.21 of pre-test to 0.29 of post-test, both were categorized as "medium". Nutrition knowledge of non-nutrition majored college students was generally not good enough from the pre-test results, but it showed significant (p<0.001) improvement by the paired samples t-test after intervention of nutrition course education. Performance of post-test indicated that scores were not related to the school system and year, but non-nutrition majored female college students exhibited significantly (p<0.01) better performance on "fat" category than male. The non-nutrition majored college students of the Department of Family Studies and Child Development performed the worst (p<0.05) in pre-test, but they showed better (p<0.05) scores than those of the Department of Restaurant and Institutional Management in post-test, which indicated that the performance was partly resulted from factors other than course education alone. |
