中文摘要 | 本研究針對屏東地區,三個不同市場的市售32種水果,利用以 TEAC(trolox equivalent antioxidant capacity)法分析水果總抗氧化力。根據TEAC法測定結果,將水果依其鮮重的總抗氧化力(total antioxidant capacity; TAC)高低可分為四群:TAC值高於10 mmole Trolox/g為抗氧化力極高的水果,包括四周柿、榴槤、草莓、珍珠拔、石榴;TAC值介於5-10 mmole Trolox/g為抗氧化力高的水果,包括鳳梨釋迦、櫻桃、百香果、五爪蘋果、翠玉蘋果、楊桃、獼猴桃(綠肉)、獼猴桃(黃肉)、富士蘋果;TAC值界於 3-5 mmole Trolox/g為抗氧化力中等的水果,包括柚子、柳橙、油桃、高朗種印度棗、椪柑、火龍果(紅肉)、香蕉、聖女番茄、蓮霧、台農二號番木瓜、富有柿;TAC值低於3 mmole Trolox/g為抗氧化力低的水果,包括火龍果(白肉)、美濃瓜、金鑽鳳梨、哈密瓜、巨峰葡萄、豐水梨、西瓜。而以清除DPPH(α,α- diphenyl-β-picrylhydrazyl)能力法分析的水果抗氧化力排序結果,除了榴槤、油桃和蓮霧以外,其他與TEAC法大致相同。 |
英文摘要 | This study was designed to investigate the total antioxidant capacity (TAC) of a total 32 fruits purchased from three separate local markets in Pingtung county. The TAC of fruits were measured by TEAC (Trolox equivalent antioxidant capacity) assay and expressed by Trolox (6-hydroxy-2,5,7,8-tetramethylchroman-2-carboxylic acid). The TAC of 32 fruits could be divided into four groups: the first group, containing highest antioxidant capacity (>10 mmole Trolox/g), included szjou persimmon, durian, strawberry, guava and pomegranate, the second group; containing high antioxidant capacity (5-10 mmole Trolox/g), included atemoya, sweet cherry, passion-fruit, delicious apple, granny smith apple, carambola, kiwi fruit, golden kiwi fruit and fuji apple, the third group containing medium antioxidant capacity (3-5 mmole Trolox/g), included shaddock, sweet orange, nectarine, Indian jujube, ponkan, pitaya (red pulp), banana, tomato, wax apple, papaya and fuyu persimmon; the fourth group, containing lower antioxidant capacity (<3 mmole Trolox/g), include pitaya (white pulp), melon, pineapple honeydew melon, grape, sand pear and watermelon. The result by DPPH method is similar to by TEAC method expect durian, nectarine and wax apple. |
