中文摘要 | 利用反應曲面法(RSM)之實驗設計探求最適切的肉雞屠體噴洗條件,試驗採用三 變數、三層階之設計以探討噴洗角度、噴洗壓力及噴水氯化濃度對雞屠體清洗效果之影響。 效果評估以生菌數減少率 (%) 為指標。 噴洗角度分別採用 30、45 及 60 度,噴洗壓力採 用 10、35 及 60psi,噴洗水氯化濃度則分別使用 5、55 及 105ppm, 噴洗時間固定為 10 秒鐘。 由所得之回歸分析數據顯示,噴洗角度在 30~60 度之間對雞屠體清洗效果並沒有顯 著影響,而氯化濃度及噴洗壓力則有顯著影響。實驗結果顯示最適當的噴洗條件為噴洗角度 30~60 度,噴洗壓力 52~60psi,噴洗水之氯濃度在 78~87ppm,在此範圍內之適當結合可使 屠體表面之生菌數減少 93%。 |
英文摘要 | A 3-variable, 3-level experimental design using response surface methodology was employed to explore the optimum condition of spray-washing for broiler carcasses. The washing effect (expressed by % of TPC reduction)as influenced by spray angle, spray pressure and chlorine level in spray water was studied. The regression analyses showed that spray angle in the range of 30~60 ° had no significant effect on washing efficiency and the spray pressure and chlorine level did have significant effect (P ≦ 0.01). From the resulted regression model Y(% TPC reduction)=84.21+8.27X �� (spray pressure) +16.86X �� ( chlorine level) - 4.21X �荃� - 15.40X �婀�, the optimum condition of spray-washing could be obtained as follows: Spray pressure 52~60 psi, chlorine level 78~87 ppm. Under such conditions a 93% reduction of total plate count could be achieved. |
