中文摘要 | 服務業的蓬勃發展及快速成長,已成為未來經濟發展的主趨勢。而旅館業在面臨即將來臨的二十一世紀,如仃在不斷變動的環境中,維持競爭優勢且永續經營,唯一制勝的關鍵在於人力資源。愈來愈多的旅館經營者及管理者意識到,員工和顧客都是其服務的對象,且都是企業長期成功地經營之重要的資產。因此如何透過好的薪酬制度以激勵員工,使其有好的工作績效,充分發揮人力資源,達成企業與個人的目標,實為一值得深入探討的課題。所以本研究乃探討旅館餐飲部之主廚的薪酬制度。研究方法為蒐集相關的初級及次級資料以進行研究,包括文獻探討、深變訪談、與資料分析整理等。本研究所得之結論,除可提供臺灣旅館在建立其主廚薪酬制度之參考外,對於後續之研究亦可依據本研究架構、結論、和建議,進行更深入的探討。 |
英文摘要 | The rapid and flourishing development of service industries has become a key player in the economic growth and certainly leads the trend. Researches of hotel industry are necessary for the growth of the industries and the associated economics and human resource management has been major forces in the long-run success business firms have enjoyed. More and more, the managers and owner in hotels are discovering that guests are not the only people they serve. They recognize that they also have to develop and offer good programs, services, and compensation that attract and retain quality employees. Therefore, the purpose of this study is to examine the chef’s compensation and performance for Taiwanese international hotel industries. The methodology of research mainly covers two ways, literature review and in-depth interview, and the content involves three parts – general compensation system of hotel industry in Taiwan, compensation system in F&B, and chef’s compensation. To sum up, this study provides and appropriate result and sustention as refereeing research and practice according to the research results. However, an awareness of the impact of chef’s compensation and the job performance is a prerequisite to be a successful enterprise. |
