中文摘要 | 摘要:本研究針對傳統熱風、低濕40°C、低濕50°C與低濕60°C不同方式進行蓮花茶之乾燥實驗,以探討四種乾燥條件下之蓮花乾燥特性曲線,並作蓮花茶之感官品評,找出其中最理想之乾燥方式,以提供蓮農參考。 實驗結果顯示:傳統熱風乾燥需46小時,蓮花之平衡含水率為9.02%,空氣之平衡相對濕度為27.93%;低濕40°C乾燥需72小時,蓮花平衡含水為11.53%,空氣之平衡相對濕度逼15.42%;低濕50°C乾燥需41小時,蓮花之平衡含水率為8.01%,空氣之平衡相對濕度為10.77%;低濕60°C乾燥僅需21小時之乾燥時間即達6.86%之平衡含水率,空氣之平衡相對濕度為10.44%。不論粉紅色或藍紫色蓮花,以低濕乾燥後,其色澤及水色評價明顯地優於傳統乾燥方法,感官品評中低濕60°C除了有較佳之評價,並縮短了乾燥的時間,提昇了工作效率,故低濕60°C乾燥蓮花為最佳之乾燥方法。 |
英文摘要 | The traditional 50°C, low humidity drying 40°C, 50°C and 60°C drying methods were used to dry Lotus flowers in this research in order to study the drying characteristic curves under four methods. Also, the sensory analysis of the products were conducted to investigate the optimum drying method for lotus flower farmers. Experimental results showed that the drying time for traditional method was 46hr, the equilibrium moisture content was 9.02%, the equilibrium relative humidity was 27.93%. The drying time for low humidity 40°C method was 72hr, the equilibrium moisture content was 11.53%, the equilibrium relative humidity was 15.42%. The drying time for low humidity 50°c method was 41hr, the equilibrium moisture content was 8.01%, the equilibrium relative humidity was 10.77%. The drying time for low humidity 60°C method was 21hr, the equilibrium moisture content was 6.86%, the equilibrium relative time for low humidity was 10.44%. The color and liquor sensory evaluation for lotus flowers using low humidity drying were significantly different from the traditional drying method. The sensory evaluation and drying time of the lotus flowers using low humidity 60°C drying method was better and shorter time than the other. Therefore, the low humidity 60°C drying was the optimum drying method recommended for the farmers. |
