中文摘要 | 本研究目的在於探討教保人員平日營養相關工作,及他們的營養知能需求。本研究採用問卷調查方式,以台灣地區立案之學齡前幼兒托兒中心(包括托兒所及幼稚園)教保人員為母群體,採多段分層隨機抽樣方式,樣本1,500人。調查時間為一年。研究結果發現負責餐點設計的方法中以選擇使用循環菜單的比例為最高。有35%樣本曾施行飲食指導者,其指導內容以『均衡飲食』居多,施行幼兒飲食指導時最常遇到的問題為缺乏教材。大約一半的樣本曾參加過營養課程,主要在學期間修課及參與訓練課程,除了正式營養課程以外,平日營養知識的來源以選擇報章雜誌最多。最希望的營養課程型態為訓練班,以幼兒營養問題及輔導方法為最希望的營養課程的內容,週末為最適合上課時段。中文探討教保人員在托兒中心餐點設計、營養教育施行、營養教育概況、營養教育需求等,與年齡層、服務學校所在地區、服務學校性質、教育程度及目前職位的關係。 |
英文摘要 | The purpose of this study is to examine nutrition routines for caregivers. The nutrition training caregivers have received and the need for nutrition education. A Questionnaire was designed for data collection. The target population was caregivers in daycare centers in Taiwan. Using a stratified random sampling procedure, 1500 subjects were sampled from the caregivers at day care centers. This study was completed in one year. The results showed that the cycle menu is the most popular meal design method. Thirty-five percent of the caregivers gave the children nutrition advice while eating. The most frequent nutrition instruction content was to eat various foods. The most frequent instruction problem was lack of proper teaching materials. Half of the caregivers had taken a nutrition course. Newspapers and magazines were a major source of nutrition knowledge for the caregivers. The most needed type of nutrition training was a short-term training program. The nutrition training that caregivers liked best was how to help children develop proper eating habits. The most suit. Able time period for a training course was on the weekend. The influences of subjects’ age J working region, type of working organization, educational background and their present position at their work place were also examined. |
