中文摘要 | 本研究目的在於建立一份進食行為檢核項目表,並了解二至五歲不同年齡幼兒的進食行為發展狀況。採立意取樣,調查前先徵得研究樣本家長與托兒中心教師的同意。研究分兩部分進行,第一部份皆是以事件觀察法紀錄60名二至五歲學齡前幼兒飲食中行為,根據觀察紀錄建立一份進食行為檢核項目表。第二部分是以所建立的檢核項目表觀察紀錄260名幼兒進食行為,研究發現包括:超過75%幼兒帶著早餐到學校吃,到校吃早餐的比例隨年齡增加而增加,幼兒平均午、晚餐時間約30分,無論食用固體或流體食物,湯匙是各年齡幼兒於午、晚餐時主要使用的餐具,手常被用於協助進食工具,筷子的使用隨年齡增加而增加。各年齡層幼兒進食時最常見與進食無關的行為是四處看。部份幼兒用餐時用手、衣服擦嘴或舔手指頭。五歲幼兒比其他年齡小的幼兒更知道對照顧者表達不吃的意見。 |
英文摘要 | This study provides a checklist which is able to record a preschool child’s eating behavior at mealtime. Eating behaviors of 2- to 5- year- old children were also studied. Subjects were selected from those children whose parents and teachers agreed to attend this study. This research includes two stages. In the first stage of the study, 60 children were observed at mealtime. Based on recorded results, a preschooler’s eating behavior checklist was developed. During the second stage of the study, the eating behaviors of 2- to 5-year old children were studied by using the checklist. More than 75% of children bring their breakfast with them to school and eat it at school. The spoon is the main utensil used to eat with. Hands are the most frequently used auxiliary tool for eating. Chopsticks are used increasingly as the children’s ages increased. Looking around was frequently observed during children’s mealtime. Five-year-old children are more likely to express their dislike of foods orally than are younger children. |
