中文摘要 | 從食物中攝入高膽固醇,雖然也是提升血膽固醇中,諸多影響因素之一。但依據前 次對膽固醇含量相當高的蝦及蟹(1153、872 mg/100g)為蛋白質來源所作的研究報告中,卻 發現老鼠的血膽固醇及三酸甘油酯量,有意比對照組低的結果。為瞭解其影響脂質代謝之作 用,是否只在於海鮮中存在的魚油成分或魚油以外的蛋白質成分,抑或二者並存下的作用效 果較優勢,遂選擇含油量及膽固醇也相當高的養鰻作用為實驗材料。 本實驗的設計分為鰻肉、鰻油、脫脂鰻肉、對照以及Basal五組,其中脫脂鰻肉及對照 組的用油是豬油,而油含量與鰻肉、鰻油組相同,四組各為20%。蛋白質來源除鰻肉及脫脂 鰻為鰻肉蛋白質外,其他三組為酪蛋白。動物係採用重量約200克的Wistar雄鼠,以自由攝 食方式,飼養三週。 結果顯示,體重的增加及飼料率以饅肉組的153±16g及37±3%顯著高於Basal組外,與 其他三組之間則不顯示差異。血清膽固醇、三酸甘油酯以及磷脂質在五組之間皆不顯示差異, 但HDL則以Basal組,顯著高於其他四組。至於肝臟總脂質、膽固醇、三酸甘油酯以及磷脂 質的結果,皆以含20%的四組,高於Basal組,而該四組間則不顯示差異。排泄在糞中的膽 固醇量,也以含20%油的四組顯示高於Basal組,而該四組間則不顯示差異。 |
英文摘要 | Serum total cholesterol may be elevated by hypercholesterolemic diet. According to our previous study, rat fed shrimp and crab as the sole protein source which were high in cholesterol, 1153 and 872 mg/100g, respectively. However, the serum cholesterol and triglyceride values were significantly lower than the casein control group. To understand the effect of either different dietary marine oil and/or the interaction of marine protein and oil on serum total cholesterol, eel was chosen due to its high containing of oil and cholesterol as well. There were five dietary groups, eel, eel oil, defatted eel, control and basal diets. Lard was added to defatted eel and control to 20% level. The eel protein was the primary protein source for eel and defatted eel groups. Casein was the protein source for rest of the experimental groups. Male wistar rats weighted appromaxiately 230g were randomly assigned to one of the test diet for 3weeks. At the end of study, serum total cholesterol, triglyceride, phospholipids and fecal cholesterol were measured. Body weight gain and feed efficiency were significantly higher in eel group (153±16g & 37± 3%, respectively) compared to basal group. No difference was found among eel oil, defatted eel and control group. Serum total cholesterol, triglyceride and phospholipids concentrations were not affected by different dietary treatment. Serum HDL-C, however, was highest in basal group. Liver total lipid, cholesterol, teiglyceride, phospholipid and fecal cholesterol as well were in 20% fat groups compared to basal diet.
