中文摘要 | 傳統蝦仁加工生產作業面臨原料短缺與進口產品之競爭,將來我國加入世界貿易 組織 WTO 之後,對產業將造成極大之衝擊。 乾燥過程為蝦仁生產流程中之重要加工製程之 一,但由於傳統蝦仁乾燥機之作業效率偏低。本研究乃針對蝦仁乾燥機之性能及乾燥效率進 行測試及乾燥成本分析評估,可提供加工業者進行乾燥機性能改進與作業效率提升之參考, 以降低生產成本,提高產品品質與產業競爭力,進而提供新型蝦仁乾燥機設計參考。 |
英文摘要 | Once we join WTO, there will be a large impact to the conventional dried shrimp processing industry due to shortage of raw materials and competition of imported products. Drying is the major process in dried shrimp processing. However, the operating efficiency of conventional shrimp dryers is quite low. This study evaluates the performance, operating efficiency, and drying costs of shrimp dryers. This evaluation can be used by dried shrimp manufactures to improve their drying and operating efficiency. Based on the suggestions, manufacturers can cut down processing costs and increase product quality and competitiveness. Besides, the results of this study can be used as a reference for new dryer design. |
