中文摘要 | 自民國75年8月至77年2月期間,在臺灣地區選擇十二地區,即包括院轄市之高雄市,縣轄市之新莊市、花蓮市,鎮有潮州鎮、大溪鎮、梧棲鎮,鄉區有牡丹鄉、卑南鄉、四湖鄉、北埔鄉、歸仁鄉、二水鄉等合計十二個鄉鎮為膳食調查地區,大部份依民國六十九年之選樣地區,其中有五個地區因某些原因,而改選鄰近相似地區。每地區抽樣34戶至66戶之間,總共選樣552戶,以實際評量食物盤存法進行膳食調查。若以上述十二地區代表整個臺灣地區膳食營養狀況,則主要如下:臺灣地區平均每人每日之熱量攝取量為2104kcal;蛋白質 76.7克,占總熱量之14.7,其中動物性蛋白質38.6克,占50.3;脂肪84.6克,占總熱量之35.6,其中動物性脂肪為46.4克,占總肪脂量之54.8;P/S比值1.35;膽固醇318mg。鈣質每人每天攝取量為507mg,磷1076mg,鐵16.9mg;維生素A為5979I.U.(904mgRE),α-生育醇10.7mg,維生素B1,1.23mg,維生素B2,1.03mg,菸鹼素當量27.4mg,維生素C,I67m(不考慮烹調之損失)。本次營養素攝取之調查值大部份均比建議值高或極為接近,僅鈣質與維生素B2值只為建議量之81.9與84.4,倘嫌不足,有待加強。粗纖維每人每日攝取量6.4克,鈉6.0克,由鈉量換算所得之食鹽總量為 14.8克。鹽、醬油之食鹽量為9.9克。若與 1980-1981年全國營養調查值相比較,顯示蛋白質,脂肪之攝取百分比上升,醣類減少;熱量攝取大約不變,各種營養素攝取量均增加而獲得改善,經換算之食鹽攝取量由13.6克上升至 14.8克,膽固醇量由247mg上升至3l8mg,動物性食品重量增加38.2,均值得特別注意改善。 |
英文摘要 | During the period of August 1986 to February 1988, a large scaledietary survey was conducted in Taiwan area. A total of 552 householdssampled from twelve districts in Taiwan, including urban and ruralareas, were studied for food consumption by food inventory method. Theaverage calorie intake per person per day was 2104 kcal and proteinintake was 76.7 g, which provided 14.7 of total calorie; of which50.3 of the total was animal origin. Average fat intake was 84.6 g, which provided 35.6 of the total calorie intake, and the P/Sratio was 1.35. Animal fat constituted 54.8 of the total fat,and theaverage cholesterol intake was 318 mg per day. Calcium intake was 507mg; phosphorus, 1076 mg; and iron 16.9 mg.Other findings includedvitamin A, 5979 I.U. (904 μg RE), α-tocopherol, 10.7mg, vitamin 61,1.23mg; vitamin B2, 1.03mg; miacin equi valent, 27.4mg; vitamin C,167mg (uncorrected for cooking losses). Total sodium intake was 6.0g which corresponds to 14.8g of sodium chloride. According to this survey, most nutrients intakes were close to orover the RDNA (Recommended Daily Nutrients Allowance). The mostinadequate intakes of nutrients still are those of calcium andriboflavin, which only reach 81.9 and 84.49. of the recommendation ,respectively. The nutrients intake data obtained in this nationaldietary survey compared with those In the 1930-1981 survey reveals that the percentage of total calorie from protein and fat were increased butfrom carbohydrate was decreased. The total calorie intake was almostthe same while the nutrients intake was improved while the vitamin 82 and calcium intake were still below the RDNA.The salt, cholesterol andanimal food intake were increased. The above mentioned, which areunfavorable factors for health, must be given appropriate attention. |
