中文摘要 | 本研究探討餵食不同量之米麩對大白鼠脂質代謝之影響。臺農67號糙米在碾成精白米時所得之米麩,經高壓殺菌釜121℃,40分鐘及60℃,20小時之熱風乾燥處理,米麩含膳食纖維32.9%,油脂21%。將40 隻 Wistar 品系雄鼠 (重約217g),隨機分成5組,分別餵予添加或不添加 1%膽固醇的AIN-76標準配方飼料為控制組及添加 1% 膽固醇之三種量(10%、30%及50%)的米麩飼料為實驗組。實驗進行30天後,分析血清及肝臟之三酸甘油酯、總膽固醇、以及血清之高、低密度脂蛋白膽固醇濃度,糞便總中性固醇與總膽酸含量。研究結果顯示,在添加膽固醇情形下,與控制組比較,30%及50%米麩組可抑制血清總膽固醇及低密度脂蛋白膽固醇濃度的上升,在血清短鏈脂肪酸濃度方面,以10%及30%米麩組之總短鏈脂肪酸濃度顯著較高,且30%米麩組之propionate及butyrate濃度為最高;在肝臟總膽固醇含量方面,則隨米麩劑量增加而顯著降低;30%及50%的米麩劑量則可顯著降低肝臟三酸甘油酯濃度;並顯著增加每日糞便總中性固醇的排出量。而添加米麩之三組實驗組,其每日糞便總膽酸的排出量均顯著增加,但在50%米麩組,其每日糞便總膽酸排出量雖有較控制組高但仍顯著低於 10% 及 30% 米麩組;可能因 50% 米麩組的糞便重量增加會促進腸道蠕動而加速糞便的排出速率,使膽酸與米纖維或米麩油中之固醇類的接觸時間降低而減少糞中總膽酸排出。 |
英文摘要 | The purpose of this study was to investigate the effects of various mounts of rice bran on lipid metabolism in rats fed with exogenous cholesterol. Rice bran was obtained from TNU-67 rice in the milling process, was cooked in an autoclave for 40 min at 121~C and dried. The rice bran included 32.9% total dietary fiber and 21% crude fat. Forty mate adult Wistar rats (about 217 g in body weight) were randomly divided into five groups: two control groups with or without 196 cholesterol added to the AIN-76 standard diet (C, CC), and the others in groups with 1% cholesterol and 10%, 30% or 50% rice bran added (R10,R30, R50), respectively. Artery blood, liver, and feces were collected after 30 days of feeding. The levels of triglycerides (TG), and total cholesterol (TC) in serum and hepatic, HDL-cholesterol (HDL-c) and LDL- cholesterol (LDL-c) in serum and neutral steroids and bile acids in feces and rice bran were investigated. The results showed that the R30 and R50 groups had lower serum TC and LDL-c levels than the CC group. The R10 and R30 groups had higher serum total short chain fatty acid concentrations and the R30 groups had the highest serum propionate and butyrate concentrations. In addition, the higher the amount of rice bran, the lower the hepatic total cholesterol level, indicating that deposition of hepatic total cholesterol was significantly inhibited by an increase in rice bran. However, when the amount of rice bran reached 30% or 50%, the hepatic TG concentration was significantly decreased. The levels of daily fecal neutral steroids increased significantly in the R30 and R50 groups. The excretion of daily fecal bile acids was significantly elevated in the groups with the addition of rice bran. However, increased bile acid excretion was more significant in the R10 and R30 groups than in the R50 group. The increased fecal weight in the R50 group may have accelerated the intestinal motility and enhanced the fecal excretion rate, which reduce the transit time for bile acids and rice fiber or sterols of rice bran oil and further decrease the total excretion of bile acid. |
