中文摘要 | 數千年來蔥屬植物(Allium species)廣泛地被種植在中東及遠東地區,而且在蔬菜、香辛調味料之應用上扮演相當重要的角色。 近幾世紀以來,許多研究發現蔥屬植物之香氣成分,對於生物體具有特殊的生理效應。因此,其醫療效用曾引起廣泛的討論。曾有許多研究顯示部分蔥屬植物之活性成分具有降低血脂質及血中膽固醇、抗血小板凝集、促進血纖維蛋白分解等作用,因此在預防心血管疾病方面有相當之療效。在癌症預防及抑制方面,部分活性成分具有減少致癌物之形成、致癌物之去活化、抑制腫瘤之生成、調節細胞生理代謝、活化細胞解毒系統、與避免細胞大分子物質受損等效用。另外,由於部分蔥屬植物具有降低血糖及促進胰島親作用等功能,有助於糖尿病患者病況之改善。蔥屬植物之含硫成分也可能藉由影響細胞之生理代謝狀況,以及成分本身之細胞毒性而達到抑制微生物的效果。對於生物體免疫力之調節則可見該等活性成分亦具有增加白血球、淋巴細胞與巨噬細胞之活性、促進自然殺手細胞之作用。 近數十年來,對於食品中活性成分之分析以及疾病病因之探討已有相當之進展;食品機能性與生物醫學在各方面之發展相當迅速。蔥屬植物如何在疾病的預防及機能性食品開發之領域拓展出一條保健、養生之道,已成為目前相當重要的話題。 |
英文摘要 | For thousanas of years, menbers of the Allium family have been widely cultivated in the Middle and Far East, playing an important role in the application of vegetables and spices. In the past centtfi'ies, many studies have found that the flavor compounds of Allium species have special physiological effects on organisms. Therefore, an intense debate has arisen about the medicinal potential of the flavor compounds. Many studies have revealed that some of the AIIium active principles possess the ability to lower blood lipids and cholesterol, and induce antiplatelet aggregation and fibrinolytic activity, showing that they have a corresponding ability to prevent cardiovascular disease. In cancer prevention and inhibition, some of the active principles can decrease carcinogen formation, inactivate carcinogen, inhibit tumor growth, modulate cell metabolism, activate cell detoxification system, and prevent cytoplasmic macromoleular injuries. Moreover, because some Allium species can lower blood sugar and enhance the action of insulin, they can improve the condition of diabetes mellitus patients. By influencing the metablolic condition of cells, or due to the cytotoxicity of compounds per se, sulfur-containing compounds of the Allium species also can inhibit microorganism. As for immune modulation in organisms, these active principles also can increase the activities of leukocytes, lymphocytes and macrophage, and enhance natural killer cell function. Over recent decades, remarkable progress has been made in the analysis of food active principles as well as in the investigation of the cause of illness; rapid development in food functionality and biological medicine in many fields has been achieved. How to build up and preserve health in the fields of disease prevention and developing functional foods using Allium plants are important topics of future research. |
