中文摘要 | 蛋已是人類日常生活上不可缺少的必需品,而蛋殼的品質會影響到蛋殼的破損, 進而影響蛋農的收入及消費者的權益。鴨蛋加工為皮蛋及鹹鴨蛋,為食品業很重要之原料, 然而在其加工過程中要挑選出可做為皮蛋與鹹鴨蛋加工很費時耗工。本研究利用非破壞性技 術求出鴨蛋殼之音波特性-第一共振頻率,輔以物性分析儀穿刺試驗求出之蛋殼強度來做一比 較,兩者之間有很好之相關性(R□=0.874);且找出有裂縫蛋之第一共振頻率高於無裂縫蛋, 本研究建立了一套利用非破壞性技術來評估蛋殼品質及檢測蛋殼裂縫之系統。 |
英文摘要 | Egg is a necessary and important food for human life. The eggshell crack was affected by the eggshell quality and induced the income lost of farmer and right of consumer. Liming egg and salted duck's egg which were processed by duck egg are very important raw materials in food industry. It need much time and labors to process that duck eggs were chosen to process be the liming egg and salted duck's egg. The acoustic characteristics, the first resonant frequency, were investigated by nondestructive technology in this research. It was compared with the eggshell strength which was obtained by the texture analyzer through puncture experiments. A good correlation relationship between the acoustic characteristics and eggshell strength (R□=0.874) was obtained. The first resonant frequency of crack egg is higher than that of good egg. Finally a nondestructive technology system to evaluate the eggshell quality and crack was established. |
