中文摘要 | 自民國84年6月至85年5月間,就東海大學牛乳加工廠所收受自營牧場及臺灣中部 12戶契約酪農戶生乳探討不同季節中生牛乳體細胞數含量在100萬cells/ml 以下者與乳汁 品質之關係。分析項目包括比重、滴定酸度、灰分、鈣、磷、鈉、鉀、美藍褪色時間與細 菌數,並以紅外線乳成分與體細胞數合併分析儀(Bentley 2300, Bentley Instruments, Inc. USA) 測定體細胞數及定量蛋白質、脂肪、乳糖、總固形分與非脂肪乳固形分等。結果發 現:於全年之體細胞數與灰分、鈉含量以及細菌數間為正相關 (p<0.05); 與乳糖含量以 及美藍褪色時間為負相關 (p<0.05),其它則關係不顯著。 本收乳區內不論暖 (4、5、10、 11 月、) 夏 (6~9 月 )、冬 (12~3 月 ) 三季或全年其總乳體細胞數介於20~50萬cells/ml 者均較高,分別佔總樣品數之39.10、51.70、68.53及52.71%,其乳組成分、理化學性狀、 灰分、礦物質含量及美藍褪色時間與<20萬及50~80萬cells/ml 兩者相較並無差異,惟在全 年其蛋白質含量、總固形分、非脂肪乳固形分及酸度則顯著較80~100萬 cells/ml 者為高 ,而灰分及細菌數則較低(P<0.05),因此體細胞數80萬cells/ml 或可視為現階段生牛乳乳 汁品質評定之一臨界點。 |
英文摘要 | Bulk milk samples taken from 13 dairy farms, which have contracted with Tunghai University Milk Plant during June 1995 through May 1996, were studied to investigate the effects of seasonal alternation and bulk milk somatic cell counts under 100 × 10 �� cerlls/ml on milk quality in raw cow's milk. The specific gravity, titratable acidity, ash, calcium, phosphorus, sodium, potassium, methylene blue reduction time and standard plate counts were investigated, and the contents of milk protein, fat, lactose, total solids, and solids-not-fat were also determined by infrared milk analyzer (Bentley 2300, Bentley Instruments Inc, USA). Somatic cell counts in the whole year were positively correlated with ash, concentration of sodium and total bacteria counts (P<0.05) , and negatively correlated with lactose, methylene blue reduction time(P<0.05), and the rest were not correlated significantly. No matter what time the milk samples were taken, in warm (Apr., May, Oct. and Nov. ), hot (Jun., Jul., Aug. and Sep.), cool (Dec., Jan., Feb. and Mar.) season, or in the whole year in this study, the somatic cell counts were usually in the range of 20~50 × 10 �� cells ml. The percentage of milk samples collected from this somatic cell counts categories in warm, hot cool season, and in the whole year were 39.10, 51.70, 68.53 and 52.71%, respectively. When compared with the somatic cell counts of <20 and 50~80 × 10 �� cell/ml, there were not significantly differences in milk components content, physico-chemical properties, ash, mineral content or methylene blue reduction time. However, when compared with the somatic cell counts of 80~ 100 × 10 �� cells/ml in the whole year, milk with 20~50 × 10 �� cells/ml had significantly highr content in total protein, total solid, solids-not-fat and acidity, but lower ash and total bacteria count (P<0.05). |
