英文摘要 | Historically, the practice of vegetarianism solely for reasons of physical health is a recent develop- ment. Only as nutritional science expanded from the mid-20th century onward did vegetarianism acpuire general recognition as a healthful dietary altermative. The health benefits of vegetarian diets have been studied extensively and are now widely recognized. For religious reasons, only ovolactovegetarian meals have been offered in Buddhist Tzu Chi General Hospital since its founding 10 years ago. The acceptance rate of hospital vegetarian meals was never studied. We surveyed hospital patients to deter- mine the prevalence of vegetarianism, the percentage who believe that vegetarianism is beneficial to physical health, and the acceptance rate of such a hospital-wide vegetarian diet. Our study found that (1) there is a high prevalence of vegetarianism (12.6% full time and 25.7% part time) among hospitalized patients, (2) the majority (58%) of patients had tried vegetarian meals before, (3)there are more female than male vegetarians, (4) most hospital patients (86-89%) believe that vegetarian meals are good for physical health. (5) some believe they are not nutritionally adequate, and (6) a high percentage (96%) of patients find the food provided by the hospital acceptable. The reasons for unacceptability are mainly not related to vegetarianism. Our findings indicate that acceptance of vegetarianism depended on patients' knowledge and the vegetarian meal itself. Potentially, education and greater attention to food presentation would achieve an even higher acceptance rate. |
