中文摘要 | 肉品工業長久以來,肉製產品常有膨包現象發生並遭退貨之損失,由於膨包的產 品其氣體具有微酸及臭味,它可能來自微生物污染所造成且這些微生物主要可能是來自乳酸 菌,而這些乳酸菌是屬於何種形態及菌屬是值得探討。因此,本試驗是針對膨包的火腿及中 式香腸產品,分離出乳酸菌並依其特性而歸類,以供業者的參考。 結果膨包樣品分析其微生物結果發現總計有 185 株的乳酸菌被分離出, 其中有 47 株異型 發酵乳酸菌被分離出約佔全部乳酸菌之 25%。 中式香腸產品所分離之 138 株的乳酸菌中有 34 株是屬於異型發酵乳酸菌。 火腿則可發現在所分離之 47 株的乳酸菌中有 13 株是屬於 異型發酵乳酸菌。在本研究中有 4 株異型發酵乳酸菌即 L. viridescens、L. divergens、 L. haltolerarans 及 L. fructivorans 可被鑑定出來。所有分離出之 47 株異型發酵乳酸 菌中有 20 株是 L. fructivorans 約佔 42.56%, 其次為 L. divergens 有 8 株約佔 17.02%,L. viridescens 有 7 株約佔 14.89%,L. haltolerarans 則有 6 株約佔 12.77% 。 火腿則可發現在所分離之 13 株的異型發酵乳酸菌有 6 株是 L. fructivorans 及 5 株 是 L. divergens。中式香腸則主要是 L. fructivorans 及 L. viridescens。 |
英文摘要 | Refund and economic loss always occurred in meat industry due to swelled package. Light sour and odor could be produced by microorganisms which majority is lactic acid bacteria (LAB) will be found in meat products with swelled package. It is valuable to study which strains of LAB can make it. The purpose of this study is to isolate and identify the microorganisms from sliced ham and Chinese style sausage with swelled package and this result can be as a reference to meat industry. The results: A total 185 strains of lactic acid bacteria was isolated from the three samples (two sausage samples and one sliced ham) and 47 strains of herterofermentative LAB (25%) were isolated from LAB. A total 34 strains of herterofermentative LAB was isolated from 138 strains of LAB in Chinese style sausage. Otherwise, a total 13 strains of herterofermentative LAB was isolated from 47 strains LAB in sliced ham. Four strains of herterofermentative LAB such as L. viridescens, L. divergens, L. haltolerarans and L. fructivorans were identified in this study. 42.56% (20/47) , 17.02%(8/47), 14.89%(7/47) and 12.77%(6/47) of herterofermentative LAB, respectively were belonged to L. fructivorans, L. divergens, L. viridescens and L. haltolerarans in this experiment. 6 strains of L. fructivorans and 5 strains of L. divergens were identified from 13 strains of herterofermentative LAB in sliced ham with swelled package. However, L. fructivorans and L. viridescens were identified and also were the major strains of herterofermentative LAB in Chinese style sausage in this research. |
