中文摘要 | 在此研究中,利用相對濕度感測器以量測玉米粒四個品種在常溫狀態下之平衡相 對濕度物性,並推衍兩個數學模式以預測品種對此平衡相對濕度物性之量化影響性。試驗結 果顯示品種對玉米粒平衡相對濕度有顯著影響。兩個預測模式中,以玉米粒之胚芽與胚乳成 份乾物重量比為參數的組成模式對三品種之預測性能十分良好,但是對於有高份比之品種則 有 1% 含水率之預測誤差。利用澱粉、蛋白質、纖維質、與糖份等化學成份比所建立之預測 模式在 70% 相對濕度以下範圍有良好之預測能力,但對高相對濕度之範圍, 預測誤差則極 為嚴重。 |
英文摘要 | In this study, the EMC/ERH property of corn kernels for four varieties were determined. Two models were developed to quantify the effect of the variety on the ERH property of corn kernels. The experimental results indicted that significant differences in experimental desorption data could be found for four varieties. The compartment model gave good agreement for three varieties except the variety with larger weight ration between germ and endosperm. The component model only exhibits good agreement with the isotherms below 70% RH. Above 70% RH range, the values predicted by this model increase rapidly due to the high moisture content value of the vacuolar component. |
