中文摘要 | 本研究於1996年在臺東縣鹿野鄉龍田臺地調查焚風對茶樹(Camellia sinensis (L.) Kuntze) 茶芽生育、受害徵狀、化學成分及製茶品質之影響。1996 年一年內總共有六 次焚風發生,均在春及夏茶季吹襲,其最高溫度自 34 至 39 ℃,相對濕度自 20 至 48 % , 造成 8 至 40 %茶芽受害,受害葉數達第三葉,葉片受害面積自 20 至 30 %,以葉尖 、葉緣、葉柄及節間徑受害明顯,呈乾枯狀有燒焦味;而且茶芽生長亦受抑制,新長出之茶 芽出現受害徵狀以致茶菁品質降低。鮮葉茶湯水色較暗濁,黃藍值以受害茶芽較高。再由化 學成分比較,不論鮮葉或成茶均以受害茶芽之兒茶素、茶單寧及總游離胺基酸含量較低;但 可溶性糖含量則有較高之趨勢。在製茶品質方面,受害茶芽製作綠茶、包種茶或紅茶之品質 均較差。 |
英文摘要 | The study was to investigate the effect of foehn on the shoot growth, injury symptoms, chemical composition and manufacture quality of tea tree (Camellia sinensis (L.) Kuntze) during 1996 at Lungteng of Luyeh district, in Taitung. A total of 6 times of foehn occurred during spring and summer crop season. The highest air temperature ranged from 34 ℃ to 39 ℃ while the lowest relative humidity ranged from 20% to 40%, which caused about 8 ∼ 40% tea shoot injury. The injury leaf number reached 3rd leaf and 20 ∼ 30% leaf area were also injured. The tea quality was lowered as results of significant dry, wither injury symptoms appeared at leaf apex, leaf margin, leaf stalk and internode, scorching smell and inhibited growth of shoot. The tea liquor color of injured fresh leaf was dark muddy which result in much higher b (yellow-blue) value than that of uninjured tea shoot. Furthermore, the catechin, tea tannin and total free amino acid content of the fresh leaf or made tea affected by foehn was lower than that of uninjured tea shoot, but the soluble suger content was higher. The overall quality of green,paochung and black tea was worsened by foehn injury. |
