英文摘要 | A food consumption survey was conducted with 42 households, including 267 persons, in rural area of San-Chih county, Taipei prefecture. The period of study was from late January to early February, 1975. The survey was carried out by the food inventory method of weighing all of the foods purchased, produced at home, and left, raw or cooked, for 5 days at each household. Average daily intakes of calories and various nutrients per person were calculated. They were compared with the recommended daily nutrient allowances (RDNA) estimated from the number of persons in each age and sex group. The results are summarized as follows: The average daily intakes per person of calories (2329kaal) vitamin A (4642 I.U.), ascorbic acid (151mg), niacin equivalent (22mg) and phosphorus (1069mg) were higher than the estimated RDNA. Protein intake (56.0mg) was close but slightly less than the RDNA. Thiamin intake (1.04mg) was 6.3% less, iron intake(11.3mg) was 13.1% less, calcium intake (372mg) was 31.7% less, and riboflavin intake (0.63mg) was 47.9% less than the estimated RDNA. Protein supplied only 9.6% of the total calories. The ratio of animal protein (13.8g) to vegetable protein (42.2g) was about 1 to 3.Fat intake (47.3g) supplied 18.3% of the total calories. since lard was used in cooking in most of these farmer families, the P/S ratio (polyunsaturated fatty acids to saturated fatty acids ratio) was 0.48, which indicates the amount of polyunstaurated fat is only about a half that of saturated fat. Average cholesterol intake was calculated to be only 128 mg per day which is only about one third that of Taipei city. The average intake of salt (sodium chloride) was 13.2g, including 2.4g from home made or commercial soy sauce. |
