| 中文摘要 | 台灣自2018年通過有機農業促進法後,如何有效增進有機農產品消費量成為關鍵議題。目前全國約120萬名國小學童每周至少一次食用有機食材,了解影響學童對增加學校午餐食用有機食材的因素為何?係為有機農業重要的議題之一。本研究以2023年農糧署調查資料,運用Logit Model與社會認知理論架構,探討學童個人及環境因素對六都國小學童增加學校午餐食用有機食材意願之影響。研究結果顯示,學童對學校午餐食用有機食材滿意度、有機食材的健康與風味,以及女同學等因素,顯著影響學童增加食用有機食材的意願。相對而言,學童在有機食農教育認知、環境與安全認知、班級是否執行食農教育課程等因素,對增加食用有機食材的意願未呈顯著影響。然而,進一步分析發現,當地方政府透過加碼補貼時,學童有機食農教育認知與增加食用意願的關聯性隨之增強,顯示單純提升學童的食農教育認知不足以直接促進食用行為,但若透過補貼提高可及性,則能促使學童將認知轉化成行為的可能。基於研究結果,建議未來有機食材政策應強化教育與環境支持的互補作用,除結合食農教育課程、提升學童對有機食材健康效益與風味認知外,亦應透過補貼降低經濟障礙,提高學童對有機食材的可及性與學校午餐滿意度,以進一步提升食用意願。本研究結果為農政單位在學校午餐政策與食農教育課程規畫提供重要參考,期能增進台灣有機食材的消費量。 |
| 英文摘要 | Since the enactment of Organic Agriculture Promotion Act in Taiwan in 2018, increasing the consumption of organic agricultural products has become an important issue. Currently, approximately 1.2 million elementary school students nationwide consume organic foods at least once a week in their school lunches. Understanding the factors influencing students' willingness to increase the consumption of organic foods in school lunches is therefore of great importance. This research employs data from a 2023 survey by the Taiwan's Ministry of Agriculture and applying the Logit Model within the framework of Social Cognitive Theory to investigate the effects of individual and environmental factors affect students' willingness in six municipalities to increase the consumption of organic foods in school lunches. The results indicate that students' satisfaction with organic foods in school lunches, their perception of the health benefits and flavor of organic foods, and being female significantly increase their willingness to consume more organic foods. In contrast, students' cognition of organic food and agricultural education, cognition of environmental and safety, whether their class implements food and agricultural education courses do not exhibit a significant effect. However, further analysis reveals that when local governments provide additional subsidies, the relationship between students' organic food education cognition and their willingness to increase consumption becomes significantly stronger. This suggests that while education alone is insufficient to directly drive behavioral change, increasing accessibility through subsidies can facilitate the translation of knowledge into action. Based on these findings, future organic food policies should emphasize the complementary role of education and environmental support. In addition to integrating food and agricultural education programs to enhance students' understanding of the health benefits of organic foods and highlight their flavor differences, policymakers should also implement targeted subsidy programs to improve accessibility and satisfaction with school lunch offerings, thereby fostering greater willingness to consume organic foods. This study provides empirical insights for agricultural policymakers in designing school lunch policies and food education programs to further promote organic food consumption in Taiwan. |
