| 中文摘要 | 大學生畢業就業而成為社會的一份子,其在學所學的專業知識將為社會所用,通識課程培育的素養也影響其日後生活,施以食育活動,可以加強對飲食知識與行為的重視。本研究是以筆者開授通識課程的學生為對象,探討課程融入食農與環境議題,選讀學生對各單元的滿意度,並比較選讀與未選讀學生對於食育指標的認知情況。結果發現,選讀學生對「認識本土稻米種類及飯糰DIY」及「飲食溯源體驗活動」等動手做的食農體驗單元,最為滿意;感受「自己做飯糰那麼容易」、「吃在地食物,不只可以確保食材的新鮮度,對人體的健康價值比較高」等食物百哩及節能減碳的意義。並經比較分析,發現選讀學生對食育指標的得分,要較與未選讀學生高出甚多;顯示食農教育在大學端的實施,確實可以提高學生對本地食材、地產地銷與環境議題的認知。最後,本研究期待大學通識教育有更多以農業及食農議題的課程,以培養大學生具備成為完整社會人的素養。 |
| 英文摘要 | College students become a part of society after graduation and employment. Their professional knowledge learned in school will be used by the society; the literacy cultivated by general education courses also affects their future life. This study takes the students of the general education course taught by the author as the object, and explores the integration of food, agriculture and environment issues into the course. The results of the study found that the students who chose to study were most satisfied with the hands-on food farming experience units such as "Understanding local rice types and DIY rice balls" and "Food tracing experience activities". After comparative analysis, it was found that the scores of selected students on food education indicators were much higher than those of non-selected students; it shows that the implementation of food agriculture education at the university end can indeed improve students' awareness of local food materials, local production and marketing, and environmental issues. This study expects that general education in universities will have more courses on agriculture and food agriculture, so as to cultivate college students' quality of life. |
