| 中文摘要 | 全球每個國家都經常發生食物風險事件。因此,研究市井小民在日常生活中究竟如何管理食物風險非常重要。本研究以質性深度訪談39名女性,探討台灣民眾在傳統市場買菜時,如何看待與管理食物風險。本研究發現,跟熟識的攤商買食物,是保證食物安全的第一守則。在菜市場,消費者通常會向攤商尋求建議或提出問題,信任因而產生或轉移,此外,消費者通常也依賴看、觸摸和聞評估食物風險。不過,上述這些風險管理策略並不能應付農藥殘留和化學添加劑等食品安全問題。因此,政府除了定期檢驗食品的安全性外,應該要加強一般民眾的食農教育。 |
| 英文摘要 | Food risk incidents are frequently observed in many countries worldwide, thereby rendering it important to investigate people's food risk handling practices in their daily lives. This study explores people's perspectives and practices regarding risk management in the context of food purchase in traditional markets in Taiwan. Based on in-depth interviews with 39 women, the results show that purchasing food from a known vendor is the rule of thumb, trust can be generated or transferred as consumers seek recommendations and ask questions, and consumers rely on seeing, touching and smelling to manage food risks. This study recognizes that consumers' risk management strategies are usually not adequate in handling such food safety issues as pesticide residue and chemical additives. It therefore urges the Taiwanese government to promote food-agriculture education in addition to regularly conducting food safety inspections. |
