中文摘要 | 預切水果因容易氧化而變棕黃,為了增加賣相,有些商家曾違法浸泡甲醛次硫酸氫鈉(CH_3NaO_3S,俗稱吊白塊),由於甲醛現已被列為一級致癌物,因此調查當前市售預切水果是否含有甲醛將對消費者的健康維護具有重要性。本研究以大台北地區市售103 件預切水果進行甲醛含量評估。首先使用本研究室設計的「單向閥水封甲醛快速檢驗方法」進行檢測,結果指出預切水果甲醛的陽性率為11.7% (12/103),進一步利用衛福部食品藥物管理署(TFDA)最新公告的「食品中甲醛之檢驗方法(二)」修正草案進行確認,此方法為定量方法,甲醛陽性率為4.9% (5/103)。經過進一步分析,結果顯示單向閥水封快速檢測法的準確度為93.2%,靈敏度為41.7%,專一性為100%,陽性預測值為100%,而陰性預測值為92.9%,因此,若使用單向閥水封快速檢測法結果呈陰性者,則不需再確認;至於呈陽性者,則需再以分光光度計檢測法進行確認。預切水果甲醛的陽性結果指出市售預切水果仍有少數商家不法浸泡甲醛,值得地方衛生局的注意,宜增加檢測頻率及加強教育宣傳。 |
英文摘要 | Because pre-cut fruits can easily brown when oxidized by exposure to air during storage, some fruit vendors may immerse them into sodium hydroxymethanesulfinate (CH3NaO3S, commonly known as Rongalite) solution in order to maintain their original appearance. At present, formaldehyde is considered a class I carcinogen. Therefore, it is important to investigate the amount of formaldehyde present in pre-cut fruits sold by vendors in order to protect consumers’ health. This study investigated 103 bags of precut fruits purchased from vendors in the Taipei metropolitan area. First, we conducted a test of our design, which we have named the "single opening exhaust valve method" (in this method, water vapor enters through the bottom of the U-shaped valve). The results using this method indicated a positive rate of formaldehyde presence of 11.7% (12/103). We further confirmed those results with a quantitative method that we termed the "Food formaldehyde detection method (Part II)" (spectrophotometry method), the guidelines for which were newly revised by the Bureau of Drug and Food Examination, Ministry of Health and Welfare. The results using this method indicated a positive rate of 4.9% (5/103). After analysis of the results obtained by these two methods, we found that the accuracy, sensitivity, positive prediction value, and negative prediction value of the "single opening exhaust valve method" were 93.2%, 41.7%, 100%, and 92.9%, respectively. Based on the above findings, we considered that those samples showing negative results via the single opening exhaust valve method need not be re-checked, whereas positive findings would need to be confirmed by the spectrophotometry method. The results also indicated that there are still a few vendors that immerse their pre-cut fruits in formaldehyde solution. It would thus be worthwhile for local sanitation departments to respond by increasing the frequency of monitoring efforts and by providing additional health education advertisements. |
