中文摘要 | 本研究目的為評估食物圖片教材輔助營養教育慢性腎臟疾病(chronic kidney disease, CKD)病人低蛋白飲食,對其營養知識、態度及行為之成效。本研究為營養教育介入研究,募集50位罹患第3b至第5期的CKD病人。使用食物圖片教材輔助教育受試者低蛋白飲食,收集教育前後體位測量及血液生化值;利用問卷及24小時回憶法了解營養教育前後受試者之營養知識、飲食態度與行為及營養素攝取情形。結果發現,受試者之體重(p = 0.001)、身體質量指數(p = 0.002)及血清總膽固醇濃度(p = 0.062)在營養教育後皆有顯著下降的情形。營養素攝取量方面,第3b期及第4期受試者之蛋白質攝取量於營養教育後亦顯著下降(p < 0.005)。此外,在營養教育介入後受試者營養知識(p < 0.01)、飲食態度(p = 0.004)及飲食行為(p < 0.01)分數皆顯著上升;受試者之營養知識與飲食態度(p = 0.006)及飲食行為(p = 0.026)呈顯著之正相關。因此,使用食物圖片教材輔助營養教育有助於提高CKD病人營養知識、飲食態度及行為之成效。 |
英文摘要 | The purpose of this study was to investigate the effects of using food pictures in individualized nutrition education on the nutritional knowledge, attitudes, and behaviors of patients with chronic kidney disease (CKD). Fifty CKD patients from stages 3b to 5 were recruited and completed the education intervention. Characteristics and biochemical data were collected, and diet questionnaires and 24-h diet records were completed and scored to assess the nutritional knowledge, attitudes, and behaviors after the education intervention. After the nutrition education, values of body weight (= 0.001), body-mass index (= 0.002), and serum total cholesterol (= 0.062) significantly decreased. With regard to nutrient intake, CKD patients in the 3b (< 0.005) and 4 (= 0.001) stages had significantly lower protein intake after the nutrition education. In addition, scores of nutritional knowledge (< 0.01), dietary attitudes (= 0.004), and behaviors (< 0.01) significantly increased, and scores of nutritional knowledge were significantly positively correlated with dietary attitudes (= 0.006) and behaviors (= 0.026) after the nutrition education. In conclusion, using food pictures in individualized nutrition education can help CKD patients improve their nutritional knowledge, dietary attitudes, and behaviors. |
