中文摘要 | 本研究添加不同濃度之幾丁聚醣 (Deacetylation degree 95, DD95) 於含組織胺生產菌之Nutrient broth (含1.0%之Histidine) 中,觀察幾丁聚醣對組織胺生產菌Enterobacter aerogenes、Raoultella ornithinolytica、 Morganella morganii和Proteus vulgaris之抑制能力。結果得知,幾丁聚醣對此四株菌之24小時最小抑制濃度 (Minimal inhibitive concentrations, MICs) 分別為:E. aerogenes為800 ppm,M. morganii與P. vulgaris為1,000 ppm,以及R. ornithinolytica為>2,000 ppm。另外,將旗魚肉浸泡0.2%和1%之幾丁聚醣一小時後於4℃ 貯存時, 與控制組比較大致上有延緩生菌數之生長與揮發性鹽基態氮之產生;其次,幾丁聚醣處理組也可延緩組織胺 之生成。若以美國FDA規定鯖科魚類組織胺的限量標準 (5 mg/100 g) 來判斷,當旗魚肉浸泡0.2%以上之幾丁 聚醣後且於4℃ 貯存時,可將保存期限由原來的9天延長至15天。 |
英文摘要 | Inhibition effect of chitosan (Deacetylation degree 95, DD95) on histamine-producing bacteria was studied. Minimal inhibitive concentrations (MICs) of chitosan against histamine-producing bacteria were as followed : 800 ppm for Enterobacter aerogenes, 1,000 ppm for Morganella morganii and Proteus vulgaris, and > 2,000 ppm for Raoultella ornithinolytica. Furthermore, the histamine-related hygienic quality of marlin flesh was elucidated after marlin flesh was presoaked in 0.2% and 1% chitosan for 1 h and stored at 4℃ . It was found that the levels of aerobic plate count and total volatile basic nitrogen (TVBN) of marlin flesh were lower in chitosan treatments (> 0.2%) compared to control. In addition, histamine contents of marlin flesh also decreased in chitosan treatments (> 0.2%), compared to control. Based on the histamine content (5 mg/100 g) for the criteria in the USFDA guideline, the chitosan treatments (> 0.2%) could prolong the storage period of marlin flesh at 4℃ from 9 to 15 days. |
