中文摘要 | 臺灣時興的吃到飽自助餐廰,其消費形態經常吸引消費者前往用餐;由於消費者及經營管理者對綠色消費認知未明,導致食物浪費之情形時有所聞,綠色消費與綠色管理概念亟待深究。本研究主要藉由參與式觀察法及半結構式深度訪談法加以分析吃到飽自助餐廰之綠色消費現況,再以萃智法理論之終極理想解工具探討綠色消費之創新管理,最後建構綠色消費管理模式;所得結果將可提供政府施政及吃到飽自助餐廰未來經營管理之參考。 |
英文摘要 | The all-you-can-eat buffet mode is prevalent among differentrestaurants in Taiwan. Owing to the consumers and managers confusedby the cognitions of green consumption, it was frequently to find thephenomenon of prodigal food. The research aimed to focus on thefollowing topics. The current situations of the green consumption and thefuture green management of the all-you-can-eat buffet were studied bythe means of participant observed and semi-structured in-depthinterviewed. This research not only innovate the green management byideal of final result (IFR) tool but construct the model of greenconsumption management which base on TRIZ methodology.Recommendations were given which were helpfully to those ofgovernment and the all-you-can- eat buffet. |
