中文摘要 | 我國中小學學生早餐略餐及營養不均的問題嚴重。在生活緊張忙碌的今日,冀望家庭恢復傳統的飲食照顧功能似乎遙不可及。故本研究致力於建立「學校早餐辦理的評估模式」,探討由學校供應早餐的評估因素。研究採立意取樣方式,藉由28位專家發展開放式問卷,並以台南地區國民中小學教師為研究對象,進行德菲法專家問卷調查,透過集體腦力激盪形成學校辦理營養早餐考量要素之共識,將專家之意見進行分析,以平均數、眾數、標準差及眾數與平均數差的絕對值等方法分析專家意見的一致性,並據此建立評估架構,再以層級分析法找出各因子之權重排序,建立評估模式。研究發現,德菲法專家問卷的意見將評估要素分成四個考量因素與十四個考量因子。層級分析法中第二層四個評估準則權重值依次為「增強因素」(0.49)、「時間因素」(0.28)、「品質因素」(0.14)及「經濟因素」(0.09)。第三層有14個評估因子,其中以「校長態度」及「家長意願」所佔權重值最高,「早餐辦理方式」佔最低權重。 |
英文摘要 | Nutritious and balanced breakfast provides us energy and invigoration which promotes academic performance and meets our physiological needs. However, we are facing a serious problem in students’ breakfast skipping and nutrient imbalance. To find a way out, implementing school breakfast shall be imperative in schools. In this study, purposed sampling was adopted to develop an open questionnaire by 28 experts to provide opinions for implementing school breakfast. Elementary and junior high school teachers in Tainan city were subjects to conduct a Delphi questionnaire and collect common opinions through brain storming. The collected data were analyzed to obtain mean, mode, SD, M’(︱mode-mean︱) to evaluate the consensus and obtain the evaluation structure. Then, the common opinions were integrated to the AHP on weighting factor calculations. Results show that 4 main elements and 14 factors regarding school breakfast were obtained through the Delphi questionnaire. Reinforcing (0.49), time (0.28), quality (0.14) and economic (0.09) elements are in the 2nd layer of the framework at AHP (Analytic Hierarchy Process) on the order of weighing value. The principal’s attitude and the willingness of parents are the key factors among the 14 factors in the 3rd layer. On the contrast, the way of implementing school breakfast is the least important factor among them. |
