中文摘要 | 本研究以氣相層析質譜儀(GC-MS)分析不同製程條件所得竹醋液之化學組成分,其變因包含排煙口溫度、加工處理條件、原料材種類、製造廠商等。由試驗結果得知,竹醋液之有機組成分包含酸性物質、酚類物質及中性物質三大類,其中以酸性物質含量較多,並以醋酸為主;比較不同排煙口溫度所得粗竹醋液之組成物顯示,排煙口溫度140℃以上所得粗竹醋液中之酸性物質大幅減少,酚類物質及中性物質則明顯增加;粗竹醋液在靜置過程其化學組成分種類將增加,經蒸餾處理則可減少其酚類物質及中性物質之種類及含量;各不同廠商所產出竹醋液及蒸餾竹醋液有相似之化學組成分,然各成分所佔比例則不相同;竹醋液之化學組成分較龍眼木產製之木醋液單純,孟宗竹、麻竹及桂竹三種竹材比較,其中以桂竹蒸餾竹醋液之化學組成分較單純。 |
英文摘要 | The chemical components of bamboo vinegar prepared from various production conditions were analyzed with GC-MS in this study. The variations included the collecting temperature, the processing conditions, the kinds of raw material and the producing factories. The results showed that the organic components containing in bamboo vinegar included acid components, phenol components and neutral components. Among which, acidic components were the main fraction which with acetic acid as the principal component. Comparison among crude bamboo vinegars that collected at various temperatures, the acid components substantially decreased but the phenol components and the neutral components increased as the temperature over 140℃. The categories of chemical component in the crude bamboo vinegar would increase during the period of storage. However, distillation could decrease the kind and content of phenol components and neutral components. The bamboo vinegar and distilled bamboo vinegar produced from various factories had similar chemical components, but had a difference in ratio of various components. The chemical component of bamboo vinegar was simpler than Euphoria longana (dragon eye) wood vinegar. Comparison among Phyllostachys pubesens (moso bamboo), Dendrocalamus latiflorus (ma bamboo) and Phyllostachys makinoi (makino bamboo), makino bamboo vinegar had the simpler chemical components than the others. |
