中文摘要 | 本研究以豬血漿蛋白與血紅蛋白為材料,探討其以alcalase與flavourzyme水解前後之抗氧化性。抗氧化性測定項目,包含還原力、亞鐵離子螯合能力及DPPH(α,α-diphenyl- β -picrylhydrazyl)自由基清除能力等三種,並與BHA(butylated hydroxyanisole)、α-生育醇或ETDA(ethylenediaminetetraacetic acid)之抗氧化性做比較。結果發現豬血之血漿蛋白經酵素水解後其還原能力、亞鐵離子螯合能力及DPPH自由基清除能力均高於未水解者,在濃度為5.0 mg/mL時,豬血漿蛋白水解物之還原力和DPPH自由基清除能力分別為未水解者之2.18和2.70倍;而血紅蛋白經酵素水解後,其亞鐵離子螯合能力及DPPH自由基清除能力亦明顯高於未水解者,在濃度為5.0 mg/mL時,豬血紅蛋白水解物之亞鐵離子螯合能力為未水解者之1.24倍,在濃度為2.0 mg/mL時,豬血紅蛋白水解物之DPPH自由基清除能力為未水解者之3.24倍。 |
英文摘要 | Plasma protein and hemoglobin, obtained from porcine blood, were used as experimental materials. The antioxidant properties, including reducing power (RP), ferrous ion chelating ability (FICA), and DPPH (α, α-diphenyl- β -picrylhydrazyl) radical scavenging activity (DRSA), of the plasma protein and the hemoglobin before and after enzymatic hydrolysis using alcalase and flavourzyme were measured and compared with those of BHA (butylated hydroxyanisole), α-tocopherol, or EDTA (ethylenediaminetetraacetic aice). The results showed that plasma protein hydrolysate had higher RP, FICA and DRSA than the plasma protein without hydrolysis. At a concentration of 5.0 mg/mL, the RP and DRSA of plasma protein hydrolysate were respectively 2.18 and 2.70 times higher than those of the plasma protein without hydrolysis. Hemoglobin hydrolysate also had higher FICA and DRSA than the hemoglobin without hydrolysis. Hemoglobin hydrolysate had 1.24 times as high FICA as the hemoglobin without hydrolysis at a concentration of 5.0 mg/mL, and had 3.24 times as high DRSA as the hemoglobin without hydrolysis at a condentration of 2.0 mg/mL. |
